CHEF NICHOLAS ST.CLAIR
With over 20 years in the restaurant industry, Executive Chef Nicholas St. Clair has built a dynamic portfolio of concepts including Antebellum, Caroline's on Main, Peyton's Pie Co., Whistle Q, Prime + Provisions, and Better Days. Known for thoughtful menus and a strong commitment to hospitality, St. Clair has helped shape the dining experience in North Georgia through concepts that range from refined to relaxed.
In partnership with Roland Stanley, he launched EAT GRT Catering to extend that same quality and care beyond the walls of their restaurants. Together, they combine culinary expertise, operational leadership, and a shared passion for events - delivering elevated food and seamless execution for gatherings of every size.
Roland Stanley is a North Georgia entrepreneur and hospitality leader dedicated to building memorable dining experiences throughout the region. He first helped cultivate that presence as co-founder of Cork It and has since continued expanding his footprint across the local restaurant scene.
Roland is the sole owner of The Stag Chophouse and a partner in Caroline’s On Main, Peyton’s Pie Company, and WhistleQ - concepts that have become staples in the North Georgia dining community.
In partnership with Chef Nicholas St. Clair, Roland co-founded EAT GRT Catering to extend the group’s restaurant-quality food and hospitality into the event space. With a strong focus on operations, guest experience, and community relationships, he helps ensure every catered event is executed with the same care, consistency, and professionalism that define their restaurants.
